The Denver Steaks are relatively new cut that has gained popularity for its rich, buttery flavor and melt-in-your-mouth tenderness, similar to a ribeye or filet mignon, making it excellent for grilling or pan-searing.
The Denver Steak, is prized for its rich beefiness and is best cooked quickly over high heat like grilling or pan-searing. Known as a “butcher’s secret“, it’s tender despite coming from a working muscle due to its unique placement, requiring skilled butchering to extract, and should be sliced against the grain for maximum tenderness.
Denver Steaks are primarily known as under blade steak or chuck under blade center steak, derived from the serratus ventralis muscle in the check primal.
