This steak is WET-AGED for 21-days, during which it is vacuum-sealed and stored under refrigeration.  Wet aging allows the beef to tenderize naturally in its own juices and while also concentrating flavor.  Compared to dry aging, wet-aged steaks retain more moisture, resulting in a juicier texture and enhanced tenderness.  Wet-aging for 21-days strikes a balance between flavor depth and tenderness, making the steak suitable for home cooks and fine dining alike.
